Earned my half Puerto Rican wings today after making a completely homemade vegan mofongo. Pretty shocking that mofongo doesn't have a larger veggie audience (recipe scouting was a bit limited).
#Bowtie from a mini version of what was plated - green plantain base (use this, but bake), roasted veggie filling (use this, but no potatoes and light on the rosemary) and spicy criolla sauce (use this, remember to use a food processor & add jalapeńos for an added kick!).
